Chicken Saltimboca
6oz chicken breast
1oz olive oil
2oz sherry wine
2oz butter
thin slice of proscuitto
flour
2oz chicken stock
chopped garlic
1 pc. of swiss cheese
- Lightly pound chicken breast, then lightly dust in flour.
- In a hot pan sauté chicken in oil until each side is golden brown.
- Lower heat and add garlic, sherry wine, and chicken stock.
- Let sauce reduce by half, top chicken with prosciutto.
- Remove pan from heat and place in oven for 1 min, add Swiss Cheese, put back in oven until cheese melts.
Remove from oven and plate chicken (use oven mitts), put pan with sauce on low heat add parsley and mix sauce quickly and pour over chicken and serve.
